Kale soup is becoming one my favorite winter meals. I recently made this soup after finding the first signs of fresh kale in the produce section this week. It usually is available in your grocery store fresh produce department from mid-winter to early spring.
Ingredients
3 Tablespoons Olive Oil
6 Garlic Cloves crushed and minced
1 Yellow Onion
4 Cups Chopped Raw Kale
4 Cups Chicken, Vegetable or Bean stock
2 Cups of Diced Cooked Chicken
2 Cups Cannellini Beans (soaked and cooked) or use 2 (15oz) canned beans
1 8 oz Canned Diced Tomatoes
Dried Italian Herb Seasoning
Salt and Pepper to Taste
Directions
Heat 2-3 tablespoons of olive oil in a large pot.
Saute garlic and onion until soft.
Add the kale and saute just until it is wilted.
Add 4 Cups of stock, the beans, tomatoes, herbs, and chicken.
Simmer 10-15 minutes.
