Kale Recipe

I've been studying the benefits of eating Kale which I have never eaten, and have been shocked by this nutrient dense food.

Knowing now the profound benefits of eating Kale, I now make a drink which I divide into three servings for three days, in my Cuisinart.

It helps me to feel I'm on top of things food-wise, thus giving me a lot of piece of mind.

Here is what I do:

Place 2 cups water in a Cuisinart.

Chop up at least 3-4 cups of Kale (pack down in the measuring cup) and place in Cuisinart. Thoroughly blend.

Add 1-2 cups of other greens...I usually use red chard. Blend.

Then add 12 oz frozen defrosted strawberries and 12 oz frozen defrosted blueberries,(preferably organic) and blend thoroughly.

Of course you can use fresh berries but I like to have these in my freezer. (These are available to me at Trader Joes market and are only berries, nothing else added)

Add 10-12 drops of Stevia or to desired sweetness and blend.

This makes about 7 cups so I divide this lovely ?? mixture between 3 glasses (my glasses are about 16 oz +) and drink one glass each day for three days.

In this way, I can be assured I'm getting at least a cup of Kale each day and a cup of berries each day.

It may seem like a lot of work but I only do this every 4 days and I usually bring a glass out of the refrigerator in the morning and drink around lunchtime.

Korean Kale

6 stalks fresh kale, washed
1 tablspoon sesame oil
1 teaspoon sesame seeds
1 sweet red pepper


Cut kale leaves off stalks, discard stalks;

Put kale in pot of hard boiling water for 10 minutes, then transfer kale into ice cold water for 10 minutes, then put in large mixing bowl;


Coat well with sesame oil, sprinkle sesame seeds;
Slice red pepper into 2 inch x 1/8 inch slices and mix into kale.

If desired, sweeten with light dash of sugar.

Serve cold as side dish or salad with small squares of chilled steamed tofu.

Sauteing Kale

After reading from several books about kale health benefits - especially for the eyes - I've started incorporating it more into my diet.

A simple way of preparing kale is just to saute it for a few minutes with olive oil, crushed garlic and sliced onions. Serve it as a side dish.
